We live in the American South and you’d know it by how often we bake biscuits in our kitchen.
Seriously, we eat a lot of biscuits.
We make several different recipes of biscuits. Some have shortening. Others have butter. One of my favorites is my grandma Vember‘s homemade Hoppy Toad Biscuits. (Get my book on food, faith and fear for the recipe!)
Recently while watching TikTok videos we saw a video by Mikaela Kathryne in which she made Butter Swim Biscuits. Basically, as the name suggests, the biscuit dough swims and cooks in a pool of melted butter in the bottom of a pan.
The biscuits are as good as they sound!
These biscuits bake up slightly fluffy inside, brown and crispy on the outsides. They offer a crackle that few breads we’ve eaten have contained. I love that crackle of the edges and the top and bottom. (Insert drool emoji here.)
Mikaela’s recipe that we used is below. You can use regular milk if you don’t have buttermilk. (But you can also mix a little lemon juice into milk and let it stand a bit to simulate buttermilk if you like.)
Trust me: You want to try this recipe. You might not make biscuits any other way again. They require no rolling out, no forming and no cutting. You don’t even need butter for the tops. (But we won’t turn our nose if you use more butter anyways!)
Butter Swim Biscuits
What You Need:
1 stick butter
2 1/2 cups all-purpose flour
4 teaspoons sugar
4 teaspoons baking powder
2 teaspoons salt
2 cups buttermilk
What You Do:
1. Grease a 13×9 baking pan with butter or spray.
2. At 425 degrees, melt the stick of butter in your pan in the oven. Remove the pan when the butter is melted before it browns.
3. Mix flour, sugar, baking powder and salt. (We suggest using a stand mixer if you have one.)
4. Add buttermilk to dry ingredients and mix until no powder is unblended.
5. Pour the whole mixture on top of your melted butter in the 13×9.
6. Mush and swirl around the dough.
7. Bake biscuits for 25 minutes at 425.
8. Remove from oven and slice how you like.
