Feb. 4 (Thursday) is National Homemade Soup Day!
We suggest a bowl of our easy homemade potato!
Peel, chop and boil (in a large pot) 2 pounds potatoes (red’s our favorite) until soft (at least an hour on medium heat).
Add 1/4 cup butter, 1/4 cup heavy cream, 1 t each salt, garlic powder and parsley, and a dash of black pepper. 
Top with cheese, crumbled bacon, scallions, etc.
#FoodieScore Pro Tip: If the soup sits a while and thickens before serving, add up to a cup of milk to thin it while keeping your soup creamier without adding water. And, as always, modify our recipe to suit your tastes.
NOTE: You can also make this in a slow-cooker, but be sure you add enough liquid that it doesn’t scald if it’s going to sit all day!
