
Granola bars are great, but they can get kind of dull after you eat enough of them.
This recipe for Peanut Butter-Chocolate Oat Bites offers something fresh as a bit of a substitute.
You can modify the ingredients list to meet your own dietary and taste needs. You could even add nuts for a bigger crunch.
In our house, these don’t last long after they’re ready and chilled. That’s mostly because I can’t stay away from them!
Peanut Butter-Chocolate Oat Bites
What You Need:
1 1/2 cups rolled oats
1/2 cup peanut butter (or substitute)
1/3 cup pure maple syrup (or honey)
1/3 cup semi-sweet chocolate chips (more if you want to indulge)
What You Do:
- Mix all ingredients in a bowl. We suggest using a rubber spatula and a bowl big enough to not spill over the top.
- Chill mixture in the fridge for an hour.
- Roll into balls. (As a #FoodieScore Pro Tip, we suggest using a cookie scoop to keep the bites more uniform.)
- Store in a sealed container in the fridge.
NOTE: If your bites are too dry and crumbly, you can add just enough additional syrup or peanut butter to hold them together appropriately!
