Tender Salisbury Steak

Our version of Salisbury Steak with fried potatoes and lima beans.

The Salisbury Steak is named for J.H. Salisbury, a 19th century physician and chemist who advocated a meat-focused diet as a benefit to health. (Today, he’d be a celebrity for all the meat-lovers in the world!)

At its core, a Salisbury Steak is simply a hamburger patty covered in a beef broth gravy.

We saw a video recipe for the dish on TikTok and had to make our own. It took us several tries to get this recipe just right. The key is making the beef steak as tender as possible.

Ground beef needs seasoning to be good. It needs tenderness to be exceptional. Adding bread and egg can make a hamburger patty more tender, and it does the same trick for these Salisbury steaks.

Salisbury Steak

What You Need:

1 1/2 pounds ground beef (80/20 fat blend is our preference)

1 egg

1 slice of bread

1/2 a medium white or yellow onion

2 cups beef broth (We mix 5 beef bouillon cubes with 2 cups hot water to make our broth.)

2 tablespoons all-purpose flour

black pepper, seasoned salt and garlic powder to taste

What You Do:

1. Preheat your oven to 400 degrees, and then wet your piece of bread slightly, just until it’s damp and soft. You can run the piece under the kitchen sink faucet turned on just to a drip, or you can dip it in a small ramekin or container with a few tablespoons of water.

2. Mix your ground beef, seasonings (to taste), bread (we usually tear it into small pieces and add it to the bowl) and egg thoroughly in a medium-sized bowl. This is best done with your hands.

3. Patty out your hamburgers into four very thin, large patties, and place them on a sprayed baking sheet with sides or in a glass baking pan.

4. Cook your hamburger patties for about 15 minutes on 400 degrees in your oven. (Cook longer if you like or if you feel you need to. This was just right in our oven.)

5. While your hamburgers are cooking, chop your onion, and add it to a stovetop pan on medium-high heat to sauté.

6. When your burger patties are done, remove them from the oven, drain off the drippings and add some to the stovetop pan with your sautéed onions.

7. Add broth and flour to the onions and drippings to start your gravy.

8. Allow about 10 minutes (on medium-high) for the gravy to bubble and start to thicken.

9. Add your hamburger patties to the gravy.

10. Turn your burner down to medium-low, and cover your pan to allow the gravy to simmer with the burgers. Pro Tip: If you use a pan too large for any of your lids, cover the pan with foil.

Serve your Salisbury steak with the sides of your choice. We suggest having some kind of bread so you can sop up the gravy on your plate when you’re done!
